Spicy Pulled Pork in Tart Cherry Sauce

  1. Place pork and onion in slow cooker.
  2. Place cherries, ketchup, vinegar, brown sugar, espresso powder, pepper flakes, cinnamon and garlic powder in a food processor or blender.
  3. Pulse to coarsely chop cherries.
  4. Pour sauce over pork.
  5. Cover and cook 8 hours on low or 4 hours on high.
  6. Uncover cooker and use 2 forks to shred pork.
  7. Stir to combine with sauce.
  8. Recover and keep warm.
  9. Serve on sandwich rolls.
