Spicy Pulled Pork in Tart Cherry Sauce
- 3 lbs pork shoulder, boneless & trimmed of visible fat
- 1 onion, halved and sliced
- 12 cup cherries, dried tart
- 12 cup ketchup
- 13 cup cider vinegar
- 14 cup brown sugar, packed
- 2 tablespoons instant espresso powder
- 12-1 12 teaspoon red pepper flakes, crushed (or 1/4 to 3/4 teaspoon cayenne)
- 1 teaspoon cinnamon
- 1 teaspoon garlic powder
- Place pork and onion in slow cooker.
- Place cherries, ketchup, vinegar, brown sugar, espresso powder, pepper flakes, cinnamon and garlic powder in a food processor or blender.
- Pulse to coarsely chop cherries.
- Pour sauce over pork.
- Cover and cook 8 hours on low or 4 hours on high.
- Uncover cooker and use 2 forks to shred pork.
- Stir to combine with sauce.
- Recover and keep warm.
- Serve on sandwich rolls.
