High Fiber Bran Muffins

  1. Preheat oven to 350u0b0.
  2. In a mixing bowl, combine the flour, sugar, salt and baking soda.
  3. Stir in the oats, bran cereal and fruit.
  4. Combine eggs, buttermilk and molasses.
  5. Add to dry ingredients; stir just until the dry ingredients are moistened. Spoon the batter into greased muffin cups about 2/3 full.
  6. Bake for 15 to 20 minutes, or until a toothpick inserted comes out clean.
  7. Makes about 20 muffins, with 130 calories each.
  8. Leftover muffins can be frozen and reheated in a 350u0b0 oven.
