High Fiber Bran Muffins
- 2 c. unsifted all-purpose flour (I use wheat flour)
- 1/3 c. sugar
- 1 tsp. baking soda
- 1 c. whole bran cereal or wheat germ
- 1/2 c. each: raisins, dried prunes and apricots
- 2 eggs, lightly beaten (artificial eggs may be used)
- 1 1/3 c. buttermilk
- 1 tsp. salt
- 1 1/2 c. uncooked oats
- 1/2 c. light molasses
- Preheat oven to 350u0b0.
- In a mixing bowl, combine the flour, sugar, salt and baking soda.
- Stir in the oats, bran cereal and fruit.
- Combine eggs, buttermilk and molasses.
- Add to dry ingredients; stir just until the dry ingredients are moistened. Spoon the batter into greased muffin cups about 2/3 full.
- Bake for 15 to 20 minutes, or until a toothpick inserted comes out clean.
- Makes about 20 muffins, with 130 calories each.
- Leftover muffins can be frozen and reheated in a 350u0b0 oven.
