Seafood Salad
- 1 (10 oz.) pkg. frozen, cooked shrimp, thawed
- 8 oz. mushrooms, sliced
- 1 medium onion, sliced in rings
- 1/2 c. vegetable oil
- 1 tsp. salt
- 1 bay leaf
- 1 tsp. snipped parsley
- 1/2 lb. scallops, cooked and drained
- 1 medium green pepper, cut 1/4-inch
- 1 lemon, cut in wedges
- 2/3 c. tarragon vinegar
- 1 tsp. sugar
- 1/8 tsp. dried tarragon leaves
- 1 small head lettuce, torn
- salt and coarsely ground pepper
- Mix shrimp, scallops, green pepper, mushrooms, lemon and onion in rectangular baking dish.
- Mix vinegar, oil, sugar, salt, tarragon and bay leaf.
- Pour over shrimp mixture.
- Cover and refrigerate 8 hours, spooning marinade over shrimp mixture occasionally. Remove bay leaf.
- Add lettuce and parsley to shrimp mixture.
- Toss salad.
- Season with salt and pepper.
