Allegheny Broiled Pigeons Recipe

  1. Dust birds with seasoned flour, brush with beaten egg yolks, and cover with crumbs.
  2. Put birds skin down under a 550 degree broiler for 5 min.
  3. Reduce broiler heat to 400 degrees, turn birds, and cook till done, basting with melted butter.
  4. Serve with the Pepper Sauce or possibly Poivrade Sauce.
  5. This recipe yields 4 servings.
