Bratwurst With Onion Marmalade Recipe
- 1/4 c. (60 ml) extra virgin olive oil
- 3 lrg onions, finely minced
- 1 c. (250 ml) dry red wine
- 1/4 c. (60 ml) balsamic vinegar
- 1 Tbsp. (15 ml) sugar
- 1/2 tsp (2 ml) dry thyme Salt and freshly grnd pepper to taste
- 8 x bratwurst, grilled or possibly broiled till browned on all sides
- 8 x hoagie rolls or possibly French bread buns, split lengthwise Assorted mustards
- Heat the oil in a saucepan over moderate heat and saute/fry the onions till tender, about 10 min.
- Add in the remaining marmalade ingredients and reduce the heat to low.
- Simmer uncovered, stirring occasionally, till almost all of the liquid has evaporated, 15 to 20 min.
- Remove from the heat and let cold.
- Serve with the cooked bratwurst on buns along with assorted mustards.
- Serves 6 to 8.
