Fried Deviled Eggs,from the Neelys

  1. add the eggs to a large saucepan filled with cold water.bring to a boil.remove from heat and let sit in the water for 14 minutes
  2. peel the eggs and slice lengthwise.
  3. remove the yolks to a bowl.add the mayonaise,dijon mustard,lemon zest,chives,hot sauce,and salt and pepper.
  4. mash the yolks toogether with a wooden spoon.
  5. taste and adjust seasoning.
  6. fill the yolk mixture into the egg whites.
  7. heat oil in deep fryer to 350F.
  8. in a medium bowl,add 1 cup of flour and season with salt and pepper.
  9. in another bowl,beat the eggs,in a third bowl,add 1cup panko crumbs.
  10. dip the eggs into the flour,then the egg and finally into the panko.
  11. gently put the eggs into the hot oil.
  12. fry until golden brown.
  13. remove to a paper towel lined sheet tray.
