Toast cups breakfast cups

  1. Grease muffin or cupcake tin or individual cups or use foil base and grease that too.
  2. Flatten toast slices with a mug or roller and place gently into the mold so it doesn't break.
  3. You may trim the toast crust but keep for an extra crunch
  4. Layer a slice of cheese at the bottom then top with the rest of the ingredients and spices or herbs.
  5. Whip the egg with milk and spice it with salt and pepper and dry/fresh basil or any preferred flavour.
  6. Pour egg and milk mix over each cup with an icecream scoop or small ladel.
  7. Cover each cup with another slice of cheese and some more herbs or spices.
  8. Preheat oven on 200 c then place the cups in the oven and lower the heat to 180 c and bake for about 15 - 20 minutes or till the egg is cooked and the cheese starts to bubble or brown.
