Irish Fruit Soda Bread
- 2 c. brown sugar, packed
- 1 (15 oz.) box seedless raisins
- 1 (15 oz.) box golden raisins
- 1 (No. 2) can crushed pineapple
- 2 to 2 1/2 c. water
- 3/4 c. margarine
- dash of lemon juice
- 1 small bottle maraschino cherries, drained
- 4 oz. Irish whiskey
- 3 1/2 c. all-purpose flour
- 1 1/2 tsp. soda
- 3 tsp. baking powder
- 1 tsp. mace
- 1/2 tsp. cloves
- 1 tsp. allspice
- 2 eggs, well beaten
- Combine first 9 ingredients in a saucepan, including juice from pineapple.
- Bring to a boil over medium heat.
- Cook 10 minutes, then reduce heat and simmer 5 minutes.
- Cool.
- Into a large mixing bowl, sift together dry ingredients and spices.
- Add cooled raisin mixture and eggs.
- Beat well.
- Bake in a greased 10-inch tube pan or 2 loaf pans at 350u0b0 for 1 hour or until a knife inserted in center comes out clean.
