King Ranch Casserole
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 (8 oz.) carton cottage cheese
- 1 small yellow onion, chopped
- 1 can green chiles, chopped
- 1 can Ro-Tel tomatoes
- 10 corn tortillas, torn into bite-size pieces
- 12 oz. pkg. mild Cheddar cheese, grated
- 6 cooked chicken breasts
- 1 tsp. whole comino seed
- Simmer chicken in water until tender.
- Remove skin and bones. Break into bite-size pieces.
- Mix together the soup, the cottage cheese, chiles, onions, tomatoes and chicken pieces.
- In a 3-quart buttered casserole dish, place a layer of tortilla pieces.
- Cover with a layer of soup and chicken mixture and a layer of grated cheese.
- Repeat.
- Bake at 350u0b0 for 30 minutes.
- Yields 4 servings.
