King Ranch Casserole

  1. Simmer chicken in water until tender.
  2. Remove skin and bones. Break into bite-size pieces.
  3. Mix together the soup, the cottage cheese, chiles, onions, tomatoes and chicken pieces.
  4. In a 3-quart buttered casserole dish, place a layer of tortilla pieces.
  5. Cover with a layer of soup and chicken mixture and a layer of grated cheese.
  6. Repeat.
  7. Bake at 350u0b0 for 30 minutes.
  8. Yields 4 servings.
