Ham Salad

  1. In a small bowl, combine mayonnaise, egg yolks (which have been forced through a fine sieve) onion and parsley; mix well.
  2. Cover and refrigerate at least 1 hour to allow flavors to blend.
  3. In a large bowl, mix ham, cheese, carrots, and pickles.
  4. Add enough of the dressing to moisten to your taste.
