Ham Salad
- 1 cup mayonnaise
- 2 hard cooked egg yolks
- 1-1/2 tbsp. onion, grated
- 1 tbsp. fresh flat leaf parsley, finely chopped
- 3 cups ham, shredded finely
- 1 cup shredded Jarlesburg cheese
- 1 to 2 carrots, minced finely
- 6 sm. gherkins (pickles), finely chopped
- In a small bowl, combine mayonnaise, egg yolks (which have been forced through a fine sieve) onion and parsley; mix well.
- Cover and refrigerate at least 1 hour to allow flavors to blend.
- In a large bowl, mix ham, cheese, carrots, and pickles.
- Add enough of the dressing to moisten to your taste.
