Cherry Tomatoes Stuffed With Shrimp Recipe

  1. In a medium sized heavy saucepan bring 2 c. unsalted water to a boil over moderate high heat.
  2. Add in shrimp and cook uncovered for 3 min or possibly till they turn pink.
  3. Whirl the shrimp in a food processor for 1 minute.
  4. Transfer to a small bowl and fold in the parsley, chives, lemon juice, extra virgin olive oil, pepper and salt; cover and refrigeratein the refrigerator.
  5. Slice about 1/3 off the top of each tomato.
  6. Scoop and throw away seeds.
  7. Fill tomatoes with shrimp mix.
  8. Makes 16-20.
