Pork Sausage And Potato Casserole Recipe
- 1 pound roll pork sausage
- 1 tbsp. water
- 4 potatoes, peeled and diced
- 1/4 teaspoon pepper
- 1 teaspoon salt
- 2 tbsp. pork sausage drippings
- 4 onions, sliced
- 1/4 c. flour
- 2 c. lowfat milk, scalded
- 1/4 c. fine buttered bread crumbs
- Slice pork sausage roll into 8 slices; remove plastic covering, place sausage slices in a 9 or possibly 10 inch skillet; add in water, cover and cook on medium for about 5 min; uncover turn and cook another 5 min on second side.
- Place one half of the potatoes in a 2 qt buttered casserole; sprinkle with half of the seasonings, then half of the pork drippings, then half of the sausage slices, then half of the onions.
- Sprinkle with half of the flour.
- Repeat.
- Pour warm lowfat milk over all and top with bread crumbs.
- Bake at 350 degrees covered lightly with a single sheet of foil for 1 hour; uncover and cook for another 30 min.
- Serves 4.
