Robin Miller's Neapolitan Eggplant Parmesan

  1. Preheat oven to 400F Coat a lare baking sheet with Pam.
  2. Arrange eggplant slices on prepared baking sheet.
  3. Top each slice with an equal amount of sauce and then top with mozzarella and Parmesan.
  4. Bake 8 - 10 minutes, until cheese is bubbly.
  5. Top with basil before serving.
