Raspberry-Nut Pinwheels
- 2 c. unsifted all-purpose flour
- 1 tsp. baking powder
- 1/2 c. (1 stick) butter or margarine, softened
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1/4 c. seedless raspberry jam
- 1 c. finely chopped walnuts
- Sift together flour and baking powder onto waxed paper. Beat together
- butter, sugar and egg in large bowl with electric
- mixer until
- fluffy.
- Stir
- in
- vanilla.
- Gradually add flour
- mixture, stirring until well combined.
- Roll out dough between 2 pieces oftaxed
- paper
- to 12 x 10-inch rectangle. Remove top
- piece
- of waxed
- paper.
- Spread
- jam
- evenly over entire surface
- of dough.
- Sprinkle evenly with nuts.tirmly roll uptough
- from
- a long side, jelly-roll style, removing waxed paper as you roll. Wrap roll in waxed paper and refrigerate several hours or overnight.
