Tortilla Soup
- 1 lb. ground beef
- 1 small onion, chopped
- 1 fresh jalapeno, chopped (optional)
- 2 cloves garlic, minced
- 16 oz. can stewed tomatoes + 1 can water
- 10 oz. can Ro-Tel tomatoes + green chiles + 1 can water
- 10 3/4 oz. can beef broth + 1 can water
- 10 3/4 oz. can chicken broth + 1 can water
- 10 3/4 oz. can tomato soup concentrate + 1 can water
- 1 tsp. ground cumin
- 1 Tbsp. chili powder
- 1 tsp. salt
- 1 Tbsp. fresh cilantro
- 1 can corn
- 10 corn tortillas, cut in strips
- 1/2 c. grated cheese for topping
- Brown ground beef; drain well.
- Add onion, jalapeno and garlic to beef and saute for a few minutes.
- Add tomatoes, soups, seasonings and water.
- Bring to a boil.
- Reduce heat and simmer for 1 hour.
- Add tortillas and cook 15 minutes more.
- Garnish with cheese.
- Enjoy!
