Bacon And Double Cheeseburger Loaf Recipe
- 4 x Bacon slices
- 1 1/2 lb Lean grnd chuck or possibly grnd round
- 1 c. Hard fresh white bread crumbs
- 4 ounce Sharp Cheddar cheese coarsely shredded
- 1 lrg Sweet onion, such as Vidalia minced
- 2 Tbsp. Regular or possibly low fat mayonnaise
- 2 Tbsp. India or possibly other sweet pickle relish
- 2 tsp Dry mustard
- 3/4 tsp Salt
- 1/2 tsp Freshly-grnd black pepper
- 1 x Egg
- 1/4 c. Ketchup
- Preheat the oven to 350 degrees.
- In a medium skillet, cook the bacon over medium heat till it is limp and some of the fat is rendered, 3 to 4 min.
- Remove the bacon from the skillet and reserve.
- In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 c. of the cheese, onion, mayonnaise, relish, mustard, salt, pepper, and egg.
- Pat the mix into a shallow 2-qt baking pan.
- Spread the top of the loaf with ketchup, then lay the bacon strips over the ketchup.
- Bake till the loaf is hard and the bacon is crisp, 45 to 50 min, sprinkling the top of the loaf with the remaining 1/2 c. cheese to heat during the last 5 - 10 min of baking.
- Internal temperature should be 155 degrees.
- Let the meatloaf stand in the baking dish for 10 min, then cut into squares to serve.
- For leftovers, reheat slices in a microwave and serve on sesame buns with lettuce, tomato and ketchup.
- This recipe yields 6 servings.
