Chicken Fried Rice
- 2 c. Uncle Ben's rice
- 4 c. water
- salt to taste
- 2 Tbsp. ketchup
- black pepper
- 1 tsp. hot sauce
- 1 large onion
- 3 blades green onion
- 1 small pkg. chicken thighs
- 2 small tomatoes, chopped small
- small amount of water
- 1 (16 oz.) bag mixed vegetables
- soy sauce
- Cook rice in 4 cups of boiling water.
- Add salt to taste; set aside to cool.
- Clean chicken thighs and remove skin.
- Place in pan.
- Salt to taste.
- Add onion and green onions, as well as tomatoes.
- Sprinkle with black pepper and hot sauce.
- Add water and cook until well done.
- Remove bones.
- Add cooked mixed vegetables to chopped chicken; mix well and add to cooked rice. Toss well together with soy sauce.
