Chicken Fried Rice

  1. Cook rice in 4 cups of boiling water.
  2. Add salt to taste; set aside to cool.
  3. Clean chicken thighs and remove skin.
  4. Place in pan.
  5. Salt to taste.
  6. Add onion and green onions, as well as tomatoes.
  7. Sprinkle with black pepper and hot sauce.
  8. Add water and cook until well done.
  9. Remove bones.
  10. Add cooked mixed vegetables to chopped chicken; mix well and add to cooked rice. Toss well together with soy sauce.
