Robin Hood Sunshine Cake
- 8 egg whites
- 3/4 tsp. cream of tartar
- 3/4 tsp. salt
- 6 egg yolks
- 1/2 c. sugar
- 1 c. flour
- 2 Tbsp. cold water
- 1 tsp. lemon extract
- 1 tsp. vanilla
- Beat egg whites until foamy.
- Add cream of tartar and salt and mix well.
- Add sugar gradually, continuing to beat until stiff peaks are formed.
- Let meringue stand while preparing egg yolk mixture.
- Beat egg yolks until thick and light colored.
- Add sugar gradually and continue to beat until fluffy.
- Add flour alternately with water and flavorings; beginning and ending with flour.
- Fold in egg white meringue.
- Pour into ungreased 10-inch tube pan.
- Bake for 60 to 65 minutes at 325u0b0.
- Cool in inverted pan.
- Frost with egg yolk frosting.
