Mexican Fiesta
- 2 lb. ground beef
- 1 small onion, chopped
- 1/3 c. taco seasoning
- 1 c. water
- 1 (16 oz.) can whole kernel corn, drained
- 1 can Mexican tomato sauce
- 1 can cream of mushroom soup
- 3 c. corn chips, crushed to 1 1/2 c.
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1 1/2 c. grated Cheddar cheese, divided
- 1 c. sour cream
- Brown ground beef in a skillet, stirring to crumble; drain well.
- In a large bowl, combine ground beef and all remaining ingredients, except 1/2 cup cheese and sour cream.
- Pour into a greased 9 1/2 x 15-inch casserole dish.
- Bake, uncovered, at 350u0b0 for 30 minutes.
- Spread sour cream over top; sprinkle with remaining cheese.
- Bake 5 minutes longer.
