Chinese Chicken Salad
- 1 (3 lb.) roast chicken
- 1 c. shredded snow peas (if available)
- 1 c. shredded celery
- 3 to 4 c. shredded lettuce
- 1/4 c. sesame seed
- 1/2 to 1 c. coarsely chopped Chinese parsley (cilantro)
- 1/4 to 1/2 c. shredded green onions
- 1/2 to 3/4 c. chopped peanuts
- 1 tsp. sugar
- 1 Tbsp. oyster sauce or soy sauce
- 1 tsp. sesame oil
- 1/2 tsp. dry mustard mixed with 1 tsp. water
- rice wine vinegar
- extra sesame oil
- Bone and shred chicken.
- Add oyster sauce, mustard, sugar and sesame oil.
- Mix well by tossing.
- Add lettuce, Chinese parsley, green onions, celery and snow peas to chicken and toss well.
- Add chopped peanuts and sesame seed.
- Add a few teaspoons rice wine vinegar and another teaspoon or two or more of sesame oil until desired flavor is achieved.
