Portuguese Black Bean Soup Recipe
- 1 1/2 c. black beans
- 6 c. cool water
- 3/4 teaspoon salt
- 2 teaspoon cider vinegar
- 3/4 c. minced onion
- 1 med. green pepper, diced
- 1/2 c. minced celery
- 1 med. potato, diced
- 1 linguinica sausage, minced
- 8 ounce. tomato paste
- 3 cloves garlic, chopped
- 2 c. water
- 3 beef bouillon cubes
- 3/4 teaspoon cumin
- 1/2 teaspoon pepper
- Dash of cayenne pepper
- In a large kettle combine beans, cool water, salt and vinegar.
- Bring to boil; lower heat and cook gently, uncovered, about 45 min.
- Add in remaining ingredients, bring to boil, reduce to simmer and cook partially covered 1 hour or possibly till beans are tender, stirring occasionally.
- Serves 4-6.
