Portuguese Black Bean Soup Recipe

  1. In a large kettle combine beans, cool water, salt and vinegar.
  2. Bring to boil; lower heat and cook gently, uncovered, about 45 min.
  3. Add in remaining ingredients, bring to boil, reduce to simmer and cook partially covered 1 hour or possibly till beans are tender, stirring occasionally.
  4. Serves 4-6.
