Rustic Vegetarian Sandwich

  1. Mix cream cheese, oregano and crushed red pepper until well blended.
  2. For each serving: Spread each of 2 bread slices with 1 Tbsp.
  3. of the cream cheese mixture.
  4. Cover 1 of the bread slices with 1 onion slice and 1/4 cup each carrots and cucumbers; top with 1/2 cup red pepper and remaining bread slice.
  5. Cut sandwich in half; serve immediately.
  6. Or, wrap in plastic wrap and refrigerate until ready to serve.
