Rustic Vegetarian Sandwich
- 1 pkg. PHILADELPHIA Neufchatel Cheese
- 2 Tbsp. dried oregano leaves
- 2 tsp. crushed red pepper
- 96 slices whole wheat bread
- 48 slices red onions, sliced
- 3 qt. carrots, shredded Target 2 lb For $3.00 thru 02/06
- 1-1/4 gal. cucumbers, cut into 1/4-inch-thick slices
- 1-1/2 gal. roasted red peppers, halved
- Mix cream cheese, oregano and crushed red pepper until well blended.
- For each serving: Spread each of 2 bread slices with 1 Tbsp.
- of the cream cheese mixture.
- Cover 1 of the bread slices with 1 onion slice and 1/4 cup each carrots and cucumbers; top with 1/2 cup red pepper and remaining bread slice.
- Cut sandwich in half; serve immediately.
- Or, wrap in plastic wrap and refrigerate until ready to serve.
