Six Layer Mexican Dip Recipe
- 4 ripe avocados
- 2 tbsp. lemon juice
- 2 (9 ounce.) cans bean dip
- Salt and pepper
- 1 c. green onions (with tops)
- 2 c. grated cheddar or possibly taco cheese
- 1 c. lowfat sour cream
- 1/2 c. mayonnaise
- 1 pkg. taco seasoning mix
- 3 seeded and minced tomatoes
- 2 sm. cans already minced or possibly 1 can minced jumbo black olives
- Chips and salsa dip
- Mash avocados and mix with lemon juice, salt and pepper.
- In separate bowl, mix lowfat sour cream, mayonnaise and taco seasoning.
- To assemble: Spread bean dip in 13 x 9-inch pan, top with avocado mix, layer with lowfat sour cream mix, sprinkle with green onions, tomatoes and olives.
- Cover with cheese.
- Serve with chips and salsa.
- Serves lots.
