Tomato Basil Pasta Bake

  1. Preheat oven to 350*
  2. Cook pasta according to directions.
  3. While the water is boiling, chop the tomatoes, broccoli and chicken.
  4. Spray a pan with non stick cooking spray over medium heat.
  5. Add garlic and let simmer until its fragrant.
  6. Reduce heat to medium-low and add tomatoes and broccoli.
  7. After about 3-4 minutes add the chicken and and 1/4 cup of pasta sauce.
  8. Let simmer over low heat while the pasta finishes.
  9. Drain pasta.
  10. Add pasta and fresh basil to the skillet.
  11. In theory I suppose you could stop here...and it would still be delicious.
  12. But Ive got a thing for baked pastas... the crispy edges and gooey cheesiness.
  13. Spray a casserole dish with non stick cooking spray.
  14. Add 1/2 of the pasta mixture.
  15. Top with 1/2 cup sauce and 1 oz cheese.
  16. Add the rest of the pasta mixture.
  17. Top with remaining sauce, cheese and bread crumbs.
  18. Bake in the oven until desired crispiness.
  19. 15 minutes should do the trick, but I took mine out after 10 minutes because I was hungry and getting impatient!
