Ladybirds Mars Bar Cheese Cake .

  1. Process biscuits until fine crumbs .
  2. Add the 80g of butter and vanilla sugar and process till combined .
  3. press the biscuit mixture over the base and half way up the sides of a 22cm round springform pan then refrigerate for at least 30 minutes to set .
  4. Place boiling water into a heatproof jug and sprinkle over gelatine and whisk with a fork until dissolved , set aside to cool .
  5. Using an electric mixer beat the cream cheese and the half cup caster sugar together until light and fluffy then gradually beat in gelatine and then the cream , beat until combined .
  6. then fold in the chopped up mars bars to the cheese mix .
  7. To make the chocolate sauce : place the chocolate and 2 tablespoons of the cream in a heatproof bowl and melt the chocolate until smooth , either in the microwave or over a pot of simmering water .
  8. To make the butter scotch sauce : place the brown sugar , 20g of butter and 2 tablespoons of cream into a small saucepan and stir on low heat , without boiling , until the sugar has dissolved .
  9. pour half the cream cheese mixture over the prepared biscuit base then drizzle half the chocolate sauce over followed by the butter scotch sauce and run a knife or skewer through the mixture to create a marble effect then top with remaining cream cheese mixture and chocolate sauce and butter scotch sauce and run knife or skewer through again to create a marble effect on top .
  10. refrigeratorate over night or until set .
  11. enjoy .
