Fruity Teacake
- 10 ounces mixed dried berries
- 8 ounces hot tea
- 1 orange
- 2 ounces butter, softened
- 4 ounces light brown sugar
- 1 egg
- 8 ounces self-raising flour
- 4 tablespoons demerara sugar
- Place the dried fruits in a bowl, pour over the hot tea and add the juice and zest of the orange.
- Cover with plastic wrap, then leave for 4 hours or better still, over night.
- Heat the oven to 350 degrees F.
- Grease and line with parchment paper the base of a 2 lb.
- loaf tin.
- Beat together the butter and brown sugar until creamy, then beat in the egg, followed by the flour.
- Carefully stir through the fruit mixture.
- Spoon the mixture into the pan, then smooth over the surface with the back of the spoon.
- Sprinkle all over with a thick layer of demerara sugar.
- Bake for 1 hour or until a skewer inserted into the centre comes out clean.
- Leave to cool in the pan, then turn out, cut into slices and serve.
