Old-Fashioned Chicken 'N Noodles

  1. In a large saucepan, place chicken, water, salt and pepper. Heat to boiling.
  2. Reduce heat.
  3. Simmer, covered, 1 hour until chicken is tender; remove chicken.
  4. Remove skin and bones from chicken; cut into bite size pieces.
  5. Measure broth, adding enough hot water to make 6 cups liquid; return to pan.
  6. Add celery, carrots, onion and parsley.
  7. Simmer, covered, 15 minutes or until vegetables are almost tender.
  8. Heat to boiling.
  9. Add noodles; boil, uncovered, 5 to 7 minutes or until noodles are tender.
  10. Add mushrooms; heat thoroughly.
  11. Yields 6 servings.
