Broccoli Cheese Soup
- 5 Tbsp. margarine
- 1/4 c. chopped yellow onion
- 1 large clove garlic, peeled and chopped
- 3 c. broccoli florets
- 1/2 c. chopped celery
- 1 c. chopped carrots
- 1/2 c. chopped green onion
- 2 1/2 c. chicken broth
- 1/4 c. flour
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. nutmeg
- 1 1/2 c. skim milk
- 4 oz. sharp Cheddar cheese, grated
- In heavy 4-quart kettle, melt 1 tablespoon margarine and saute yellow onion and garlic for 2 minutes.
- Stir in chicken broth. Add broccoli florets, carrots, celery and green onion.
- Bring to a boil over high heat; reduce heat to simmer.
- Cover, leaving cover just slightly ajar to prevent broccoli from turning olive drab in color.
- Simmer for 10 minutes.
