Broccoli Cheese Soup

  1. In heavy 4-quart kettle, melt 1 tablespoon margarine and saute yellow onion and garlic for 2 minutes.
  2. Stir in chicken broth. Add broccoli florets, carrots, celery and green onion.
  3. Bring to a boil over high heat; reduce heat to simmer.
  4. Cover, leaving cover just slightly ajar to prevent broccoli from turning olive drab in color.
  5. Simmer for 10 minutes.
