Chicken Mandarin Recipe
- 1 (2 1/2-3 lb.) frying chicken, cut into serving pcs
- 1/4 c. seasoned flour (good seasoning: Jason's flavored bread crumbs and/or possibly Mrs. Dash's)
- 2 teaspoon butter
- 2 teaspoon oil
- 4 teaspoon lemon juice
- 1/2 c. orange juice
- 2 teaspoon honey
- 1/2 teaspoon soy sauce
- 1/2 teaspoon powdered ginger
- 1 (11 ounce.) can mandarin oranges, with juice
- Shake chicken pcs in a paper bag with seasoned flour to coat.
- In a skillet, heat oil and butter.
- Add in chicken and brown each piece.
- Drain mandarin oranges and save the juice for the next step.
- Set aside.
- Mix juice from the can with the lemon juice, orange juice, honey, soy sauce, and ginger.
- Pour sauce over the chicken in skillet.
- Cover and simmer 30 min or possibly till tender.
- Add in mandarin orange sections 5-10 min before chicken is done.
