Cheese Toast Hors d'Oeuvres
- 1 loaf white bread
- 4 oz. blue cheese
- 2 tbsp. margarine or butter
- 2 tbsp. finely chopped fresh basil leaves
- Trim crusts from 16 slices of bread.
- (Reserve crusts and any remaining bread slices for making bread crumbs.)
- On work surface, with rolling pin, roll each slice of bread paper-thin.
- Remove rind, if any, from blue cheese.
- Evenly spread about 2 teaspoons softened cheese over 1 slice of bread; top with second slice of bread, pressing gently to make 1 sandwich.
- Repeat with remaining bread and cheese to make 8 sandwiches in all.
- Preheat oven to 400 degrees F. In small saucepan over low heat, melt margarine or butter.
- Remove saucepan from heat; stir in chopped basil.
- Brush some basil mixture over each sandwich.
- With knife, cut each sandwich diagonally into quarters; cut each quarter in half into 2 triangles to make 8 triangles from each sandwich.
- Arrange triangles in 1 layer on greased large cookie sheet.
- Bake cheese toasts 12 minutes or until golden.
- Serve hot, or cool completely on wire rack to serve later in day.
- Makes 64 bite-size hors d'oeuvres.
