Cheese Toast Hors d'Oeuvres

  1. Trim crusts from 16 slices of bread.
  2. (Reserve crusts and any remaining bread slices for making bread crumbs.)
  3. On work surface, with rolling pin, roll each slice of bread paper-thin.
  4. Remove rind, if any, from blue cheese.
  5. Evenly spread about 2 teaspoons softened cheese over 1 slice of bread; top with second slice of bread, pressing gently to make 1 sandwich.
  6. Repeat with remaining bread and cheese to make 8 sandwiches in all.
  7. Preheat oven to 400 degrees F. In small saucepan over low heat, melt margarine or butter.
  8. Remove saucepan from heat; stir in chopped basil.
  9. Brush some basil mixture over each sandwich.
  10. With knife, cut each sandwich diagonally into quarters; cut each quarter in half into 2 triangles to make 8 triangles from each sandwich.
  11. Arrange triangles in 1 layer on greased large cookie sheet.
  12. Bake cheese toasts 12 minutes or until golden.
  13. Serve hot, or cool completely on wire rack to serve later in day.
  14. Makes 64 bite-size hors d'oeuvres.
