Sourdough, Apple and Almond Dressing

  1. Preheat oven to 350F.
  2. Cook bread cubes in large roasting pan until crisp, about 20 minutes.
  3. Transfer to very large bowl.
  4. Butter 3-quart baking dish.
  5. Melt butter in large skillet over medium heat.
  6. Add bacon; saute until golden, about 8 minutes.
  7. Add onions and celery; saute until crisp-tender, about 5 minutes.
  8. Add apples; saute 2 minutes.
  9. Add mixture to bread.
  10. Add nuts and herbs.
  11. Season with salt and pepper.
  12. (Can be made 1 day ahead; chill.)
  13. Preheat oven to 425F.
  14. Mix eggs into dressing.
  15. Add enough stock to moisten.
  16. Spoon into baking dish.
  17. Cover; bake 20 minutes.
  18. Uncover; bake until top is crisp, about 20 minutes longer.
