Polish Doughnuts Recipe
- 1 lg. cake of yeast
- 1 pt. hot lowfat milk
- 4 yolks & 1 whole egg
- 1/2 c. + 1 tbsp. sugar
- 1/4 pound butter
- 1 teaspoon salt
- 1/2 teaspoon vanilla
- Grated rind of 1/2 orange
- About 7 c. flour
- Dissolve yeast in lukewarm lowfat milk; add in 1 Tbsp.
- sugar and 2 c. flour, cover and let stand in hot place about 1/2 hour.
- (Sponge mix.)
- Beat Large eggs, sugar, vanilla, orange rind, salt and beat till light.
- Add in this to the sponge, heat butter, add in to mix.
- Add in remaining 5 c. flour.
- Knead about 5 min.
- Cover and let rise about 1 hour, or possibly till double in bulk.
- Turn onto floured board.
- Pat with hands till dough is half inch thickness.
- Cut with doughnut cutter and let rise again.
- Drop in deep warm fat.
- Fry till done.
- When cold, sprinkle with powdered sugar.
