Assam(Tamarind) Curry fish & squid
- 6 large chili
- 6 curry leaf
- 6 small Chili
- 1 tsp Curry powder
- 1 tsp turmeric powder
- 6 small Onion
- 1/4 cup cooking Oil
- 3 tbsp Assam (Tamarind) Paste
- 2/3 cup Water
- 2 lemon grass
- 300 grams Squid
- 1 Eggplant
- 6 lady finger
- 1 dash Salt / fish Sauce / sugar
- 2 tomato
- 500 grams sting-ray fish
- Blended all Sauce ingredients (added cooking oil until it turn into a Smooth paste)
- In hot pan stir fried vegetables for 2 Minutes, Set aside
- in another hot pan Stir fried lemon grass until golden brown, add in Assam curry Paste, Cook until the initial added oil separate from the paste
- add in Water, bring to boil; add in Vegetables, cook for 3 minutes, add in fish and squid Cook for 15 Minutes
- Added salt / fish sauce to taste (add in sugar for Extra flavor)
