Blue Cheese Wafers Recipe
- 1 c. crumbled blue cheese (4 ounce., room temp.)
- 1/4 c. butter, softened
- 1 c. flour
- 1 c. walnut pcs, finely minced
- In small mixing bowl, combine cheese and butter.
- Cream till fluffy.
- Fold in flour and walnuts to blend thoroughly.
- Form into a log about 2" in diameter and 12" long.
- Wrap in wax paper.
- Refrigeratetill hard, about 1 hour.
- Cut log into slices, 1/4" thick.
- Place 1/2" apart on baking sheets.
- Bake in 375 degree oven 12 to 14 min, just till bottoms are lightly browned.
- Transfer to racks to cold.
- Store in air tight container.
- Serve for dessert with fresh fruit and a selection of cheeses.
- This kitchen tested recipe may be doubled.
- Store logs securely wrapped in freezer up to 1 month.
- Store in refrigerator up to 1 week.
- Slice and bake as needed.
