Turkey Smoked Sausage Rice Skillet Recipe
- 1 pound turkey smoked sausage
- 2 tbsp. butter
- 1/2 c. sliced fresh mushrooms
- 1/2 c. sliced carrots
- 1 med. zucchini, cut into halves lengthwise and sliced (1 1/4 c.)
- 1 can (8 ounce.) stewed tomatoes, undrained
- 1 c. water
- 1/4 teaspoon basil
- 1/4 teaspoon thyme
- 1 1/2 c. uncooked instant rice
- Cut sausage into serving size pcs; set aside.
- Heat butter in large skillet over medium-high heat.
- Add in mushrooms, carrots and zucchini; saute/fry 3 min.
- Stir in tomatoes with juice, water, basil, thyme and sausage; bring to a boil.
- Reduce heat to low; cover and simmer 5 min.
- Mix rice into liquid.
- Cover, remove from heat and let stand 8 min, stirring after 4 min.
- Makes 4 servings.
