Two-Cheese Seafood Linguini
- 6 to 8 oz. linguini or any other favorite pasta
- 2 large garlic cloves, minced
- 1 tsp. dried oregano, crushed
- 2 Tbsp. butter
- 1 fresh medium tomato, chopped
- 1/2 c. heavy cream
- 1 c. crabmeat, shrimp or fish
- 1/2 c. sliced green onions
- 1/4 c. crumbled Blue cheese or shredded Swiss cheese
- 1/4 c. grated Parmesan or Romano cheese
- Cook pasta according to package directions; drain.
- While pasta is cooking, cook garlic and oregano in butter in a saucepan, stirring frequently, for about 1 minute.
- Add chopped tomato and continue cooking, stirring occasionally, for 3 minutes or until tomato is cooked through.
- Add remaining ingredients.
- Mix well. Cook over medium heat, stirring frequently, until Blue cheese is melted and sauce is hot.
- Place hot-cooked pasta on a serving dish and top with sauce.
- Yields 3 to 4 servings.
