Mexican Chicken Casserole Recipe
- 6 chicken breasts, boiled
- 1 lg. taco Doritos
- 1 1/4 c. chicken broth
- 1 c. grated Cheddar cheese
- 1/2 c. minced green peppers
- 3/4 c. minced onions
- 2 cans cream of chicken soup
- 1 can Rotel tomatoes
- 1 teaspoon garlic salt
- 1 tbsp. chili pwdr
- Remove skin from chicken and debone.
- Dice into fairly large pcs.
- Put aside in bowl.
- Put Doritos in bowl and pour chicken broth over them.
- Let stand for 5 min, stirring occasionally.
- Grease large casserole dish.
- Put in casserole by layers, 1/3 Doritos, 1/2 green peppers, 1/2 onions, 1/2 chicken, and 1/3 cheese, ending up with Doritos on top.
- Mix together 2 cans cream of chicken soup, can Rotel tomatoes, garlic salt, and chili pwdr; pour over top.
- Bake at 350 degrees for 45 min.
- Sprinkle with remaining cheese after taking out of oven.
