Picadillo Stuffing
- 1 large onions chopped
- 1 large green bell peppers chopped
- 3 each garlic cloves minced
- 1/4 cup olive oil
- 1 large tomatoes fresh
- 1 pound ground beef
- 1/4 cup pimento stuffed green olives spanish-style
- 1/4 cup raisins, seedless dark
- 2 tablespoons capers
- 2 cups rice
- 3 1/2 cups chicken broth
- 1/4 cup almonds slivered
- 1/4 cup sherry dry, spanish-kind
- 1 x salt and black pepper to taste
- In a large skillet saute onion, pepper and garlic in olive oil.
- Add tomato and cook slowly until well blended.
- Brown meat in same skillet and cook slowly with olives, raisins, and capers.
- Meanwhile, cook rice in stock until done.
- Mix rice with other ingredients to form a moist, but not wet, stuffing.
- Season with salt and pepper.
- Stuffs a 12 to 15 pound turkey.
