Anadama Bread(Yields 2 Loaves)
- 1 c. yellow corn meal
- 2 c. water
- 2 Tbsp. shortening
- 1/2 c. molasses
- 1 1/2 tsp. salt
- 1/2 c. warm water (110~)
- 1 pkg. active dry yeast or 1 cake compressed yeast
- 6 c. flour
- In large mixing bowl, combine corn meal with 1/2 cup water. Bring the remaining 1 1/2 cups of water to a boil and add to corn meal mixture.
- Add shortening, molasses and salt; cool to lukewarm.
- Dissolve yeast in warm water; add to corn meal mixture. Stir in enough flour to make a stiff dough.
- Turn dough out on lightly floured board or pastry cloth and knead until smooth and elastic.
- Place in greased bowl; cover.
- Let rise in warm place until double in bulk, about one hour.
- Cut dough in half and shape.
- Place in greased loaf pan, 9 x 5-inch.
- Cover and let rise in warm place until double in bulk, about one hour.
- Bake in moderate oven (375u0b0) for 50 minutes.
- Brush top with melted butter.
