Anadama Bread(Yields 2 Loaves)

  1. In large mixing bowl, combine corn meal with 1/2 cup water. Bring the remaining 1 1/2 cups of water to a boil and add to corn meal mixture.
  2. Add shortening, molasses and salt; cool to lukewarm.
  3. Dissolve yeast in warm water; add to corn meal mixture. Stir in enough flour to make a stiff dough.
  4. Turn dough out on lightly floured board or pastry cloth and knead until smooth and elastic.
  5. Place in greased bowl; cover.
  6. Let rise in warm place until double in bulk, about one hour.
  7. Cut dough in half and shape.
  8. Place in greased loaf pan, 9 x 5-inch.
  9. Cover and let rise in warm place until double in bulk, about one hour.
  10. Bake in moderate oven (375u0b0) for 50 minutes.
  11. Brush top with melted butter.
