Lamington Mess

  1. ROUGHLY break or tear lamingtons into chunks.
  2. Using a fork, break down the raspberries in a large bowl to release their juice, still retaining some of their shape.
  3. Add the lamingtons and PHILLY and using a folding action, fold through twice only.The mixture should appear quite rough.
  4. SPOON the mixture into 6 serving glasses and refrigerate until chilled.
  5. Dust with icing sugar if desired and serve immediately.
