Gluten-free, Vegan Mixed Berry Pancakes
- 1 1/2 cup all purpose gluten-free flour
- 1 tbsp baking powder
- 1 tbsp coconut sugar (optional)
- 3/4 tsp xanthan gum
- 1 1/2 cup almond milk
- 1 flax egg (1 tbl ground flax, 3 tbl water)
- 1 tsp coconut or olive oil
- 1 tbsp nutritional yeast
- 1 tbsp wheat germ (optional)
- Prepare flax egg and sit about for 3-5 minutes to achieve egg-like texture.
- In a medium mixing bowl sift flour, baking powder, xanthan gum, wheat germ, and nutritional yeast.
- Add milk, sugar, oil, and flax egg.
- Mix.
- Preheat ave grease a large pan to medium heat.
- Pour pancake batter and cook 2-4 minutes each side until golden brown.
- I use Bob's Red Mill brand for flour.
