Gluten-free, Vegan Mixed Berry Pancakes

  1. Prepare flax egg and sit about for 3-5 minutes to achieve egg-like texture.
  2. In a medium mixing bowl sift flour, baking powder, xanthan gum, wheat germ, and nutritional yeast.
  3. Add milk, sugar, oil, and flax egg.
  4. Mix.
  5. Preheat ave grease a large pan to medium heat.
  6. Pour pancake batter and cook 2-4 minutes each side until golden brown.
  7. I use Bob's Red Mill brand for flour.
