Coconut Loaf
- 12 cup butter
- 12 cup sugar
- 2 eggs
- 1 12 cups self-rising flour
- 14 cup flaked coconut, small flakes
- 2 tablespoons milk
- Cream the butter and sugar together until light and fluffy.
- Beat in eggs one at a time, adding a little flour with the second.
- Fold in remaining flour, coconut, and milk.
- Turn into a greased and floured loaf tin.
- Bake in a preheated oven at 350 degrees for 60-75 minutes.
