Lemon Chicken in Pastry Shells

  1. Bake pastry shells according to package directions.
  2. In medium skillet over medium-high heat, heat oil.
  3. Add chicken in 2 batches and cook until browned, stirring often.
  4. Set chicken aside.
  5. Pour off fat.
  6. Add gravy, lemon juice, thyme and vegetables.
  7. Heat to a boil.
  8. Return chicken to pan.
  9. Reduce heat to low.
  10. Cover and cook 5 minutes or until chicken is no longer pink.
  11. Serve in pastry shells.
