Skillet Chicken Couscous

  1. Coat a nonstick skillet with vegetable cooking spray.
  2. Arrange chicken cubes in a single layer.
  3. Brown chicken over moderate heat, turning to brown evenly.
  4. Stir in remaining ingredients. Cover tightly and turn heat to low.
  5. Simmer 3 or 4 minutes until most of the liquid is absorbed by the couscous.
  6. Remove from heat and keep tightly covered until served.
  7. Makes 4 servings.
