Skillet Chicken Couscous
- 1 chicken breast, boned, skinned and diced
- 1 c. fat-skimmed chicken broth
- 1/2 c. apple or pineapple juice
- 2 peaches or nectarines, diced
- 1 large or 2 medium onions, chopped
- 1 1/2 c. couscous
- 3 Tbsp. minced fresh cilantro or parsley
- 1 Tbsp. cumin seed
- 2 tsp. curry powder
- 1/4 tsp. ground cinnamon or apple pie spice
- Coat a nonstick skillet with vegetable cooking spray.
- Arrange chicken cubes in a single layer.
- Brown chicken over moderate heat, turning to brown evenly.
- Stir in remaining ingredients. Cover tightly and turn heat to low.
- Simmer 3 or 4 minutes until most of the liquid is absorbed by the couscous.
- Remove from heat and keep tightly covered until served.
- Makes 4 servings.
