Squash Pie
- 3 cups (700 ml) pureed yellow squash
- 1/2 stick melted butter
- 1 tsp (5 ml) each of coconut, lemon & vanilla flavoring
- 2 eggs beaten
- 1 tbsp (15 ml) flour
- 1 cup (225 ml) coconut
- 1 cup (225 ml) sugar
- deep dish pie crust or
- 2 regular pie crusts
- Beat flour, sugar, butter and eggs well.
- Add flavoring, squash and 3/4 cup (175 ml) coconut.
- Pour in pie shell(s).
- Sprinkle remaining 1/4 cup (60 ml) coconut on top of pie(s).
- Bake at 350 degrees (175 C.) for 40 to 50 minutes.
