Potato Spice Cake
- 2 cups flour, all-purpose
- 1 1/2 cups sugar
- 1/2 cup cocoa powder
- 3 teaspoons baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1/4 teaspoon allspice
- 3/4 cup vegetable shortening
- 1/2 cup milk
- 1 cup mashed potatoes cold
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon lemon extract
- 1/2 cup raisins, seedless
- 1/2 cup nuts
- Sift together flour, sugar, cocoa, baking powder, salt and spices.
- Cut shortening into flour mixture until fine as cornmeal.
- Add all at once milk, pototoes, unbeaten eggs and flavoring.
- Beat until smooth.
- Beat in nuts and raisins.
- Pour into a large well-greased angel cake pan.
- Bake at 350F (180C) F for 70 minutes or until done.
- Cool about 10 minutes.
- Remove from pan.
