Mexican Succotash
- 1 cup Uncooked yellow rice ( or whatever you prefer )
- 2 1/4 cup Water ( may vary by rice type )
- 1 can Black Beans ( or use fresh!! )
- 1 can Kidney Beans ( or fresh!! )
- 1 can Diced Tomatoes
- 1 can Sweet Corn
- 1 each Diced Onion
- 1 can Sweet Peas
- 1 each Diced Carrots
- 1 each Green Bell Pepper
- 1 each Diced Celery
- Add everything in a big pot and cook until rice is tender!
- ( My yellow rice to about 35-40 minutes )
- * Fresh Ingredients are ALWAYS best!
- But canned or frozen are good substitutes as well!
