Weight Watchers Tortilla Soup
- 1 1/2 c. chopped onions
- 2 garlic cloves, chopped
- 1 Tbsp. oleo
- 1 (16 oz.) can tomatoes, chopped
- 2 c. beef bouillon (2 cubes)
- 2 c. chicken bouillon (2 cubes)
- 1 c. water
- 1 1/2 c. tomato juice
- 1 small can green chiles, chopped
- 1 tsp. cumin seed
- 1 tsp. chili powder
- 1 tsp. salt (optional)
- 1/4 tsp. black pepper
- 2 Tbsp. Worcestershire sauce
- 1 Tbsp. picante sauce (or more)
- 6 corn tortillas, cut into slices
- 6 oz. Cheddar cheese, shredded
- 12 oz. cooked chicken
- Saute onion and garlic in oleo.
- Add remaining ingredients except cheese and tortillas and cook in crock-pot or simmer on stove for 1 hour.
- Add cheese and tortillas and simmer 10 minutes more.
