Zesty Chicken Skewers with Lime and Coriander
- 12 chicken tenderloins or thick chicken breast strips Whole Foods 1 lb For $3.99 thru 02/09
- 2/3 cup KRAFT FREE* Thai Lime & Coriander Dressing
- 1 1/2 cups water
- 2 teaspoons oil
- 1 1/2 cups couscous
- 2 tablespoons chopped dried apricots
- 2 tablespoons currants
- 2 spring onions, sliced
- 1/2 cup toasted flaked almonds
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- Thread each strip of chicken onto a bamboo skewer and place into a flat baking tray.
- Drizzle with 1/3 cup dressing and allow to marinate for 2 hours, turning occasionally.
- Bring the water and oil to the boil, add the couscous, cover and turn off the heat, allow to stand 5 minutes or until the water is absorbed.
- Stir through the remaining 1/3 cup of dressing with the fruit, spring onions, almonds and herbs.
- Keep warm.
- Char grill or barbecue the skewers for 5-8 minute or until cooked through.
- Spoon the cous cous onto serving plates top each with 3 skewers and serve immediately.
