Zesty Chicken Skewers with Lime and Coriander

  1. Thread each strip of chicken onto a bamboo skewer and place into a flat baking tray.
  2. Drizzle with 1/3 cup dressing and allow to marinate for 2 hours, turning occasionally.
  3. Bring the water and oil to the boil, add the couscous, cover and turn off the heat, allow to stand 5 minutes or until the water is absorbed.
  4. Stir through the remaining 1/3 cup of dressing with the fruit, spring onions, almonds and herbs.
  5. Keep warm.
  6. Char grill or barbecue the skewers for 5-8 minute or until cooked through.
  7. Spoon the cous cous onto serving plates top each with 3 skewers and serve immediately.
