Apple-Cornmeal Dressing
- 1 1/2 cups chopped onion
- 1 cup chopped celery
- 3/4 cup butter
- 3 cups chopped, peeled tart apples
- 1 cup chopped walnuts
- 1 1/2 cups raisins
- 6 cups stale, cubed corn bread
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon ground sage
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 1/2 cup stock, milk or water (approximately)
- Sautee onion and celery in butter until soft.
- Add apples and saute another two to three minutes.
- Add remaining ingredients except for liquid and cook for several minutes.
- Taste for seasoning.
- Add just enough of the liquid to moisten the mixture.
- Dressing should be somewhat dry as the apples will moisten it further as it cooks.
